Wines from Santorini are of great quality, especially white varieties like Asirtiko and Athiri which are extra dry. Generally wines from Greece are not so commercial, so Greeks should pay more attention on export.

When Selosse says that the wine is macerated for 8 hours before pressing; what does he mean? Is the wine just sitting in picking bins? Destemmed, placed in a bin and tread by foot? Lightly pressed, and then (the wine from this first pressing) pumped back over the grape, before being pressed again, more completely eight hours later? Where does the liquid for the extraction come from. Are the grapes de-stemmed or not???

Peter - Dear friends are returning to Norway after several years of exchange of foods, wines, champagnes and friendships. We recently hosted a 'good-bye' champagne party for them; one of the bottles of champagne they offered was a Charles Heidsieck Blanc des Millenaires 1983 - No. 1928. I would like to 'replace' the bottle; however, I cannot find it offered through the internet. Please advise - where might I find such a bottle? Regards

Slightly off topic, but I am attending a Billecart Salmon dinner tonight. I have recently purchased some 86 Nicolas Francois from Millesima for this dinner. The 6 bottle case of wine has come in original wooden casing, and the bottles are in pristine condition with the old label on it which is white and does not write out Nicolas Francois but has initials NF Billecart. The person I have split the case with thinks it may be recently disgorged because of the condition of the bottle and pristineness of the capsule and label. Any thoughts?

I agree. Pol Roger's 'Pure' is utterly amazing. Far outshines Gautherot's Extra Brut champagnes in my opinion.
